For this final chronicle of 2024, Edouard Amoiel offers us a world tour of Christmas traditions. What do we prepare for holiday meals around the world? Follow the guide!!
We start in the south of France in Provence, with the essential 13 desserts representing the Last Supper with Jesus and his 12 apostles. Family tables find simple delights composed of dried figs, almonds, grapes, walnuts and dates, nougat (black and white), soft cakes with olive oil (called “Christmas Pump”), candied fruits , earpieces and fresh fruit. On the Christmas markets of Stockholm, Malmö and Gothenburg, we find traditional smoked and marinated fish, Christmas ham, beetroot salad and meatballs, but it is SOS or Smör, Ost och Sill, whose main ingredients are butter, cheese and herring, which is at the heart of the dinner. Direction Madagascar where the New Year’s Eve meal is served in a subdued atmosphere by candlelight. Whether it is the turkey stuffed with pork, each piece of which is specifically reserved for a member of the family, or the vary, a very spicy rice dish accompanied by fish, the grand sweet finale most of the time takes place around a dessert with Madagascar vanilla and some fruits.
And to finish the adventure, the USA and Mexico
In New York, a solemn moment at Rockefeller Center attracts a large crowd when the giant Christmas tree lights up above the ice rink. Stuffed turkey remains the ultimate festive dish accompanied by the irreplaceable cranberry sauce and sweet potato puree. Pecan and pumpkin pies complete this opulent feast. In Mexico, the festivities begin on December 16 and last 9 days (las posadas) symbolizing the nine months of pregnancy of the Virgin Mary. We taste the Pavo o Guajolote, a Mexican version of turkey, cooked long hours in white wine, with prunes and stuffed with minced pork. El Ponche is the Christmas drink par excellence with a taste of fruit, cinnamon with touches of tamarind, cane sugar and prunes. Served hot,the pleasant smell fills homes.
